Saturday Kitchen 29.11
(by Peter Richards MW)
This week’s wine VT from Worcester featured what must be one of my favourite lines ever to have delivered on the show: ‘Let’s get on the sauce!’
Wine for chicken, walnut and pomegranate stew by Sabrina Ghayour
-
Baglio Nero d’Avola 2012, Italy (£8.50, M&S)
Peter’s comments: there are a lot of zingy flavours going on in this dish – a balance of saltiness and spicy sweet fruity richness – and this supremely versatile red is just the ticket.
Wine to go with Marcus Wareing’s lamb and harissa glazed aubergine
-
Pietrariccia Fiano Surani 2013, Italy (from £6.74, Majestic)
Peter’s comments: this is quite a brilliant white – we tried it with quite a few dishes after Marcus’ over the course of a few days, and it was wonderfully versatile. You might think it sounds a bit bonkers putting a white with lamb but it just works. Great value too. Marcus agreed: ‘I really like white wine with lamb, this is delicious,’ he commented. ‘He certainly knows his stuff,’ said James.
Links, recipes and heaven & hell
Pauline McLynn’s heaven and hell, as expertly cooked by James Martin, are as below together with my wine matches:
Tandoori salmon – Washington Hills Columbia Valley Riesling 2013 (£8.99, Tesco)
Deep-fried fish bites with ketchup and fennel salad – Villa Maria Private Bin Sauvignon Blanc (from £6.99, widely available)
Thanks to James, Pauline, Marcus and Sabrina. Thanks also to the fabulous team at Cactus TV and our wine VT supremos Andy Clarke and Mike Maddams. Thanks to M&S and Majestic for their help. And finally thank you to you for reading!
Wine VT clips will be arriving shortly. In the meantime you can catch the show via Iplayer. You can find the recipes via this link. Enjoy!
