Saturday Kitchen 30.11
(by susie)
We took in the festive sights, sounds and smells of Birmingham’s Christmas market this week, among other local highlights including some very tasty wines…
Wine to go with Tom Kerridge’s venison steaks with red cabbage and potato pancakes
-
Taste the Difference Priorat 2009 (£8.99, Sainsbury’s)
Susie’s comments: stunning dish as ever from Tom, just packed full of moreish flavour. You could go New World with this – a Jordan Cabernet/Merlot 2011 from South Africa worked very well – but this heady yet succulent and refreshing red does a fantastic job too.
Wine to go with Daniel Galmiche’s pan-fried calf’s liver with spinach, capers and lemon zest confit
-
Fleurie 2011, Claudius Morand (from £9.99, Majestic)
Susie’s comments: one of the most difficult dishes I’ve ever had to match on Saturday Kitchen! We tried plenty of reds and whites with this, the former more satisfying, and it took the bright juicy acidity and peppery hints of the Beaujolais to stand up to the pungent liver, rich honey and tangy lemon. So gratifying to see it well received in studio.
Recipes, links and details
The studio guest was the lovely Carlos Acosta. For his heaven and hell dishes, as cooked by James Martin, I chose:
For salmon, scallop and mackerel pie with green salad and honey dressing – Finest Limoux Chardonnay 2011 (£8.99, Tesco)
For Cumberland sausage ring with Cumberland sauce, mash and fresh watercress – Gerard Bertrand Syrah/Carignan Minervois 2010 (£8.99, Waitrose)
The show is available to watch via iplayer until 7.12.13 (when it will be Peter’s turn!) You can find all the recipes via the BBC Food site. I’ll upload the clips in due course. Thanks to James, Tom, Daniel, Carlos and all the fine crew at Cactus TV. And thanks also to you for watching and popping in here!
