Something of a different feel to Saturday Kitchen this week as James Martin took a well deserved winter break and the Spice Men – chefs Cyrus Todiwala and Tony Singh – took the helm in studio.

Finest Chablis Grande Cuvée 2013, France (Tesco, £9.99)
Susie’s comments: a subtle and elegant dish that needed exactly the same kind of wine. We tried a few but nothing had the right kind of texture and freshness as this Chablis.

Villa Maria Private Bin Riesling 2014 (from £7.86, widely available though we filmed in Waitrose)
Susie’s comments: It’s got to be Riesling with all that tangy lime flavour in the recipe. Our instinct was for a more succulent style, given the spiciness of the chilli. But actually it was a drier version that went best – the dish itself was flavoursome but not too punchy. Funnily enough, Argentine Torrontes was a slightly surprising alternative, going really well with the dish too.
