Saturday Kitchen 7.2
(by Susie Barrie MW)
Something of a different feel to Saturday Kitchen this week as James Martin took a well deserved winter break and the Spice Men – chefs Cyrus Todiwala and Tony Singh – took the helm in studio.
To go with Daniel Galmiche’s fried cod loin with white bean purée and garlic crisps
Finest Chablis Grande Cuvée 2013, France (Tesco, £9.99)
Susie’s comments: a subtle and elegant dish that needed exactly the same kind of wine. We tried a few but nothing had the right kind of texture and freshness as this Chablis.
To go with sea bass ceviche with sweet potato by Martin Morales
Villa Maria Private Bin Riesling 2014 (from £7.86, widely available though we filmed in Waitrose)
Susie’s comments: It’s got to be Riesling with all that tangy lime flavour in the recipe. Our instinct was for a more succulent style, given the spiciness of the chilli. But actually it was a drier version that went best – the dish itself was flavoursome but not too punchy. Funnily enough, Argentine Torrontes was a slightly surprising alternative, going really well with the dish too.

Samantha Janus was the studio guest and my choices for her heaven and hell dishes were:
Lamb shoulder with harissa and lamb stovies – Surani Costarossa Primitivo di Mandura 2013 (from £8.24, Majestic)
Chicken livers wrapped in a spiced omelette with a fennel and onion salad – Cono Sur Bicicleta Pinot Noir rosé, Chile (£7.49, Morrisons)
Thanks to Cyrus, Tony, Martin, Daniel, Sam and all the fabulous team at Cactus TV and the BBC. Click on the links to find the recipes and the show on iplayer. I’ll upload the wine clips here in due course. Next week, it’s Brian Turner in charge and Peter on wine (rumours are it will involve him ice skating, so well worth tuning in for the laugh).
