Susie’s Christmas Bellini

So here it is: Susie’s Christmas Bellini. As featured in this month’s Waitrose Food magazine.

You didn’t ask for it. You may not even know you want it (yet). But it’s delicious and thoroughly seasonal.

It’s a twist on the classic Bellini, which is Prosecco and peach. Susie’s version adds clementines and, if you’re feeling very fancy, a drop of orange blossom water. It’s pretty easy to make and fills you with festive cheer.

What’s more, given the amount of fruit in it, it’s practically one of your five a day. So if you have five of them…*
