If Tom Aikens cooking you pan-fried John Dory with turnips and chestnuts isn’t an invitation to crack open the white Burgundy, I don’t know what is.
This was my Saturday Kitchen pairing for Tom’s aforementioned delightful creation. It’s the affordable end of the white Burgundy spectrum, sure. But it’s a brilliant match – and one for which not being too flavoursome or concentrated is actually a positive, especially given the little twist of horseradish in there.
The wine picks up beautifully on the buttery flavours, just accentuating that heart-warming feel of the dish.
