Summery Sauvignon for spicy fish

This was my Saturday Kitchen pairing for crisp fried fish with softened sweet onion by Great British Bake Off 2016 winner Nadiya Hussain.
The dish has a fair bit of spice and aromatic scent. Typically, I’d reach for a Riesling or Pinot Gris – but Sauvignon Blanc can also work really well with a bit of spice. The ripeness of fruit in this wine together with its zesty acidity makes a great combination. ‘I like the balance with the spice,’ commented Daniel Galmiche, adding, ‘it complements all the dish: elegant, citrussy, I love it.’ (Susie, 7/10, July 2016)
