New initiatives aimed at reinventing certain styles doesn’t always work for drinks like wine, so it’s wonderful when something does make sense. The En Rama initiative is designed to get people as close as possible to the experience of drinking fresh, dry sherry straight from the barrel – which is the ideal way to enjoy it, when it still has all its vibrant freshness and haunting aromas of roasted nuts and sea spray.

Tio Pepe have been doing this for a while now and it’s well worth a try. Nutty, tangy, salty – ideal with tapas like fresh toasted almonds, boquerones (anchovies), warm pitta and hummus. Look out for the bottling date on the back – ours was the 5th April 2016, so we had it within a month of it coming out of the cask. That’s not too shabby. (Peter & Susie, 6.5/10, May 2016)
